- 8 oz pasta (fusilli or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 whole bell pepper (red or yellow), diced
- 1 cup broccoli florets (lightly steamed)
- ½ cup black olives, sliced
- ¼ cup red onion, finely chopped
- ½ cup feta cheese, crumbled (optional) Optional ingredient.
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano

Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool it down. Set aside.
In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, broccoli, black olives, and red onion.
In a separate bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to create the dressing.
Pour the dressing over the pasta and vegetables. Toss everything gently until well combined.
