- 2 tablespoons unsalted butter
- 1 large onion, thinly sliced About 150g.
- 1 ripe pear, cored and thinly sliced Approximately 150g.
- 1 medium apple, cored and thinly sliced Approximately 150g.
- 8 slices bread Whole grain or your choice, approximately 400g.
- 8 ounces sharp cheddar cheese, grated Approximately 225g.
- 4 ounces Brie cheese, sliced Approximately 115g.
- Salt and pepper To taste.
Heat 1 tablespoon of butter in a skillet over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are caramelized, about 15 minutes. Remove from heat and set aside.
While the onions are caramelizing, prepare the bread. Lay out 4 slices of bread on a clean surface. Spread a layer of grated sharp cheddar cheese evenly on each slice.
On top of the cheddar, layer the sliced pear and apple evenly across the 4 slices. Add a few slices of Brie cheese on top of the fruit.
Spoon the caramelized onions evenly over the Brie layer, then top with an additional layer of cheddar cheese. Finish with the remaining 4 slices of bread to create sandwiches.
Melt the remaining tablespoon of butter in the skillet over medium heat. Once melted, carefully place the assembled sandwiches in the skillet. Cook each sandwich for about 4-5 minutes on each side or until golden brown and the cheese has melted.
Remove the sandwiches from the skillet, cut in half if desired, and serve immediately.
You can add herbs like thyme or rosemary for extra flavor.
Experiment with different cheeses; goat cheese or gouda can also work well.
For a touch of sweetness, drizzle honey inside the sandwich before grilling.
