Pear & Apple Grilled Cheese With Caramelized Onions

Ingredients
  

  • 2 tablespoons unsalted butter
  • 1 large onion, thinly sliced About 150g.
  • 1 ripe pear, cored and thinly sliced Approximately 150g.
  • 1 medium apple, cored and thinly sliced Approximately 150g.
  • 8 slices bread Whole grain or your choice, approximately 400g.
  • 8 ounces sharp cheddar cheese, grated Approximately 225g.
  • 4 ounces Brie cheese, sliced Approximately 115g.
  • Salt and pepper To taste.

Instructions
 

  • Heat 1 tablespoon of butter in a skillet over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are caramelized, about 15 minutes. Remove from heat and set aside.
  • While the onions are caramelizing, prepare the bread. Lay out 4 slices of bread on a clean surface. Spread a layer of grated sharp cheddar cheese evenly on each slice.
  • On top of the cheddar, layer the sliced pear and apple evenly across the 4 slices. Add a few slices of Brie cheese on top of the fruit.
  • Spoon the caramelized onions evenly over the Brie layer, then top with an additional layer of cheddar cheese. Finish with the remaining 4 slices of bread to create sandwiches.
  • Melt the remaining tablespoon of butter in the skillet over medium heat. Once melted, carefully place the assembled sandwiches in the skillet. Cook each sandwich for about 4-5 minutes on each side or until golden brown and the cheese has melted.
  • Remove the sandwiches from the skillet, cut in half if desired, and serve immediately.

Notes

You can add herbs like thyme or rosemary for extra flavor.
Experiment with different cheeses; goat cheese or gouda can also work well.
For a touch of sweetness, drizzle honey inside the sandwich before grilling.
