  • Mix mayonnaise, ketchup, horseradish, paprika, salt, and other spices together in a small bowl to make the signature Bloomin sauce. Set aside for dipping.
  • In a big bowl, stir together the flour, paprika, garlic powder, salt, black pepper, and cayenne to make the dry coating mix.
  • Dip each piece of chicken into the flour mixture, then into buttermilk mixed with water. Dip again into the flour mixture for a double coat.
  • Set the pressure cooker to sauté mode and heat oil to 350 degrees Fahrenheit in the pot. Use a thermometer if available.
  • Carefully fry each chicken piece in hot oil until golden brown and cooked through, about 10 to 15 minutes depending on size.
  • Lift chicken pieces out and drain on paper towels. Use the float valve and sealing ring for safety while finishing up.
  • Serve the fried chicken hot with the signature Bloomin sauce on the side and enjoy the crispy and juicy flavors.
