- 1 lb chicken breast, boneless and skinless
- 1 cup pineapple chunks, fresh or canned
- 1 cup jasmine or basmati rice
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 bell pepper, chopped any color
- 3 cloves garlic, minced
- 1 cup chicken broth
- 3 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon brown sugar
- salt and pepper to taste
- green onions for garnish optional
Cook the rice according to package instructions. Rinse the rice under cold water and boil it in water (1 cup rice to 2 cups water ratio) until tender. Set aside when done.
Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and stir-fry until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion and bell pepper. Sauté for about 3 minutes or until softened. Add the minced garlic and continue to cook for 1 more minute until fragrant.
Return the cooked chicken to the skillet. Add the pineapple chunks, chicken broth, soy sauce, brown sugar, and cornstarch. Stir well to combine.
Bring the mixture to a simmer and cook for an additional 5-7 minutes, allowing the sauce to thicken and the flavors to meld together.
Serve the chicken and pineapple mixture over the fluffy rice and garnish with sliced green onions if desired.
You can substitute the chicken with tofu or shrimp for a different variation.
Adjust the level of sweetness by adding more or less brown sugar based on your preference.
