Ingredients
  

  • 8 oz cream cheese, softened
  • ½ cup crushed pineapple, drained
  • ½ cup powdered sugar Adjust for sweeter taste if desired.
  • ½ cup pecans, chopped
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon garlic powder Optional
  • ¼ cup additional pecans for rolling
  • assorted crackers or fresh veggies for serving

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, crushed pineapple, powdered sugar, chopped pecans, vanilla extract, and garlic powder (if using).
  • Use a hand mixer or spatula to mix the ingredients until well blended and smooth.
  • Shape the mixture into a ball or log shape with your hands.
  • Wrap the cheese ball tightly in plastic wrap and refrigerate for at least 1 hour to firm up.
  • Before serving, roll the cheese ball in additional chopped pecans to cover the outside.
  • Transfer the cheese ball to a serving platter and serve with assorted crackers or fresh veggies.

Notes

For an extra touch, you may garnish with fresh herbs like parsley or chives.
This cheese ball can be made a day in advance and kept refrigerated.
If you prefer a sweeter taste, you can adjust the amount of powdered sugar.
