Preheat the oven to 350 degrees Fahrenheit.
Season both sides of the pork chops with salt and pepper to taste.
Heat the olive oil in a skillet over medium high heat.
Add the pork chops to the heated skillet and brown on both sides. Remove, and set aside.
Layer the sliced potatoes on the bottom of a 9×13 baking dish.
Place the browned pork chops on top of the potatoes.
In a bowl, combine the milk, French onion soup mix and cream of onion soup.
Pour half the soup mixture over the potatoes.
Then layer the rest of the sliced potatoes on top of the pork chops.
Pour the leftover soup mixture over the top.
Cover the dish tightly with foil.
Bake for 45 minutes until the potatoes are tender and pork is cooked through.
Remove the foil and pop it back in the oven for 10 more minutes to brown things up nice.
Let your Pork Chop Supreme rest about 5 minutes before serving.
Notes
Serve warm. Leftovers store well in an airtight container in the fridge for up to 3 days or freeze for longer storage.
