Equipment

  • 1 large skillet or wok
  • 1 cooking spoon or spatula
  • 1 measuring cups and spoons
  • 1 bowl for mixing

Ingredients
  

  • 2 cups cooked rice Preferably day-old.
  • 1 cup pork tenderloin, thinly sliced About 200g.
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables Peas, carrots, corn.
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • ½ teaspoon ground black pepper
  • 2 tablespoons vegetable oil For frying.
  • 2 large eggs
  • to taste salt

Instructions
 

  • Start by preparing all your ingredients. If you haven't done so already, cook the rice in advance and refrigerate it for at least a few hours or overnight to dry it out slightly.
  • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the pork slices and sauté until browned and cooked through, about 5 minutes. Remove the pork from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic for about 30 seconds, until fragrant.
  • Add the mixed vegetables to the skillet and stir-fry for about 2-3 minutes until they are heated through.
  • Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
  • Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine everything.
  • Pour in the soy sauce and oyster sauce, along with sesame oil and black pepper. Stir-fry everything for about 3-4 minutes, ensuring the rice is evenly coated and heated through.
  • Finally, add the cooked pork and chopped green onions back to the skillet. Mix well for an additional 1-2 minutes until everything is heated through. Adjust salt if necessary.
  • Serve the Pork Fried Rice hot, garnished with additional green onions if desired.

Notes

Using day-old rice helps achieve the ideal texture. Freshly cooked rice may be too moist and result in a mushy dish.
Feel free to customize the vegetables based on your preference or availability.
You can adjust the amount of soy sauce and oyster sauce according to your taste.
