  • 3 tenders Chicken tenders seasoned, cooked, and diced
  • 1 breast Chicken breast seasoned, cooked, and diced
  • ½ pint Grape tomatoes diced
  • ½ Avocado diced
  • 4 slices Bacon cooked and diced
  • 4 leaves Iceberg or romaine lettuce for wraps
  • 2 Tablespoons Dijon Mustard
  • 2 Tablespoons Sour cream
  • ¼ teaspoon Freshly ground black pepper to taste

  • Cook and season the chicken tenders or breast in your pressure cooker. Set the sealing ring and watch the pressure build. Once you hear the valve hiss, quick release after cooking to keep chicken juicy.
  • While the chicken is resting, cook the bacon until crisp. Dice into small pieces.
  • Dice the grape tomatoes and avocado, keeping them chunky but easy to bite into.
  • Mix Dijon mustard, sour cream, and freshly ground black pepper in a bowl to make the sauce.
  • Combine diced chicken, bacon, tomatoes, avocado, and mustard sauce. Stir gently to coat but keep chunks.
  • Spoon the filling mixture into lettuce leaves to create wraps.
  • Serve immediately to keep lettuce crisp.

Notes

Ranch dressing can be used instead of Dijon sauce. Make this recipe Whole30 compliant by using compliant mayo instead of sour cream.
