  • cup dry white wine or chicken broth deglazes and builds flavor
  • 1 cup heavy or whipping cream for creamy decadence
  • cup sun-dried tomatoes brings tangy bite
  • ½ teaspoon dried oregano adds herb goodness
  • ¼ teaspoon crushed red pepper flakes a tiny kick
  • 2 cups cooked or rotisserie chicken shredded
  • cup freshly grated parmesan cheese plus more for serving
  • small handful fresh basil torn or chopped

  • Start by cooking that pasta till it’s al dente, just like the package says. Drain it off and set aside so it doesn’t get soggy while you work on the sauce.
  • Melt the butter in a big skillet on medium heat. Toss in the flour and stir it around for a couple minutes till you get a roux going. This thickens the sauce later.
  • Add your minced garlic and tomato paste to that buttery roux. Keep stirring for another minute or two so it all melds together tasty.
  • Now pour in your white wine or chicken broth. Scrape the pan to pick up all the bits stuck to the bottom. Let this simmer a bit, 2-3 minutes till it reduces slightly.
  • Time for the heavy cream, sun-dried tomatoes, oregano, and red pepper flakes. Stir it good and let this simmer for 5-7 minutes until it thickens up into that creamy dream sauce.
  • Add your cooked pasta back to the skillet, toss it around so every piece gets a coat of that amazing sauce. This is when you add your shredded chicken too, folding it gently so it warms through without breaking apart.
  • Dish it up right away, with a sprinkle of fresh basil and freshly grated parmesan on top. Serve it hot for best results and watch everybody dig in.
