  • 6 medium Flour tortillas ready for rolling up all that yum
  • 12–14 oz Thinly sliced roast beef the star of these French Dip Roll Ups
  • 6 slices Provolone or Swiss cheese melty is the goal here
  • 2 tablespoon Melted butter to brush on top, gives that golden crisp finish
  • 1 teaspoon Garlic powder for a little punch of flavor on top
  • 1 packet Au jus mix or 1 and a half cups beef broth, whichever you got, to make that dipping sauce
  • ½ cup Caramelized onions bring on the sweet and savory combo
  • 6–8 thin slices Jalapeño to sprinkle over for a bit of kick
  • ¼ cup Shredded cheddar cheese to sprinkle over for a bit of kick

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  • Lay out the tortillas on a clean surface. Place a slice of roast beef and a slice of cheese on each one. Roll tightly, just like a burrito, but don’t fold the ends. Place them seam-side down on the baking sheet so they stay rolled.
  • Melt a few tablespoons of butter. Stir in a pinch of garlic powder and a bit of salt. Brush the tops of each roll up with the butter mix to help them brown and add flavor.
  • Bake for 10–12 minutes or until the cheese melts and the tortillas start to brown. Watch near the end to avoid over-crisping.
  • While the roll ups bake, prepare your dipping sauce by adding 1 au jus seasoning packet to 2 cups of water or beef broth in a small pan. Bring to a simmer and stir until smooth and slightly thickened.
  • Slice each roll up in halves or thirds for easier dipping. Serve warm with a small bowl of warm au jus on the side.

Use thinly sliced roast beef for easier rolling and even heating. Warm tortillas slightly before rolling to prevent cracking. Serve with warm au jus for dipping—homemade or store-bought works fine. Store leftovers in foil or an airtight container; reheat in the oven for best texture.
