This Doritos Taco Casserole is a family favorite combining layers of seasoned ground beef, melted cheese, crunchy Doritos, fresh lettuce, tomato, and tangy Catalina dressing for a quick and satisfying meal.

  • 1 pound ground beef
  • ½ cup diced onion
  • 1 packet taco seasoning
  • cup water
  • 10.75 ounce can cream of chicken soup
  • 8 ounce shredded cheddar cheese
  • 8 ounce shredded Monterey Jack cheese
  • 10.5 ounce bag Doritos, crushed
  • 1 tomato, finely diced
  • 1 head Romaine or iceberg lettuce, finely shredded
  • 16 ounce bottle Catalina dressing
  • additional toppings (sour cream, guacamole, salsa, jalapeños, sliced olives) optional

  • Brown beef and diced onion in skillet, drain off any fat.
  • Add taco seasoning mix and water. Bring to a boil, then turn down heat and allow to simmer for 5-8 minutes. Turn off heat.
  • Stir in cream of chicken soup until combined well.
  • Preheat oven to 350F degrees.
  • In a 9 x 13-inch pan, layer ingredients as listed: crushed Doritos, taco meat and ⅔ of the shredded cheese.
  • Bake uncovered for about 15 minutes (until cheese is fully melted).
  • Remove from oven and top with finely shredded lettuce, diced tomatoes and remaining shredded cheese.
  • Drizzle with Catalina dressing.
  • Serve with any of your additional favorite taco toppings.
