- 4 medium sweet potatoes About 2 pounds.
- 1 pound pulled pork Cooked and shredded.
- 1 cup barbecue sauce
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ¼ cup chopped green onions

Preheat the oven to 400°F (200°C).
Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet lined with aluminum foil to catch any drips.
Bake the sweet potatoes in the preheated oven for about 45-60 minutes or until they are tender when pierced with a fork.
While the sweet potatoes are baking, prepare the pulled pork. If using a slow cooker, combine the cooked pork with barbecue sauce in the pot and heat on low for about 30 minutes. For an instant pot, heat the mixture on the sauté function for 10 minutes.
Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently fluff the insides with a fork.
Spoon the pulled pork mixture into the center of each sweet potato.
Top each stuffed potato with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped green onions.
