Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Use an electric mixer to cream them together until light and fluffy.
Add the pumpkin puree, egg, and vanilla extract to the bowl. Mix until well incorporated.
In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. If using, fold in the chocolate chips gently.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, until the cookies are golden around the edges but still soft in the center.
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
