  • 1 large plate or tray for assembling wraps

Ingredients
  

  • 8 pieces rice paper wrappers
  • 1 medium carrot, julienned about 60g
  • 1 medium cucumber, julienned about 100g
  • 1 medium red bell pepper, thinly sliced about 100g
  • 1 medium yellow bell pepper, thinly sliced about 100g
  • 1 cup purple cabbage, shredded about 70g
  • ½ cup fresh cilantro leaves
  • 1 medium avocado, sliced about 150g
  • ¼ cup fresh mint leaves
  • dipping sauce (soy sauce, peanut sauce, or sweet chili sauce) for serving

Instructions
 

  • Prepare all the veggies by washing and slicing them as directed in the ingredients list.
  • Fill a shallow bowl with warm water and dip one rice paper wrapper in the water for about 10-15 seconds, or until it becomes soft and pliable.
  • Transfer the softened wrapper onto a damp cutting board or a large plate.
  • Lay a small amount of each vegetable and a few cilantro and mint leaves across the center of the wrapper, leaving about an inch of space on the sides.
  • Add 1-2 slices of avocado on top of the veggies.
  • Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top, like a burrito.
  • Repeat the process with the remaining rice paper wrappers and filling ingredients.
  • Serve the rolls immediately with your choice of dipping sauce.
  • If not serving immediately, cover the rolls with a damp paper towel to prevent them from drying out.

Notes

Feel free to customize the fillings based on your preference; options like cooked shrimp, tofu, or bean sprouts work well too.
