Ingredients
  

  • 2 cups long-grain rice white or brown, rinsed
  • 4 cups vegetable broth
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup carrots diced
  • 1 cup bell peppers diced
  • 1 cup peas frozen or fresh
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Start by rinsing the rice under cold water until the water runs clear to remove excess starch.
  • In the rice cooker, add the olive oil and sauté the diced onion and minced garlic for about 2-3 minutes until fragrant and translucent.
  • Add the diced carrots and bell peppers to the rice cooker, sautéing for an additional 3-4 minutes until they become slightly tender.
  • Add the rinsed rice to the vegetable mixture in the rice cooker. Stir well to combine.
  • Pour in the vegetable broth and add the peas, dried thyme, salt, and black pepper. Stir to ensure all ingredients are well mixed.
  • Close the lid of the rice cooker and set it to the regular cooking cycle for rice.
  • Once the cooking cycle is complete, let the rice sit for an additional 5-10 minutes to absorb any remaining moisture. Fluff the rice before serving.

Notes

You can customize this pilaf with other vegetables like zucchini, corn, or mushrooms based on your preferences or seasonal availability.
For added protein, consider mixing in cooked beans or lentils before serving.
