Cook the mixture, stirring frequently to prevent sticking, until it begins to simmer.
Reduce the heat to low and continue to cook for about 20-25 minutes, stirring occasionally, until the pudding thickens to your desired consistency.
Once thickened, remove from heat and stir in the vanilla extract and ground cinnamon if using.
If desired, fold in raisins for added sweetness and texture.
Serve warm in bowls or allow to cool and refrigerate for a chilled dessert.
