  • 3 red bell peppers fresh and ready to roast
  • 2 tablespoon olive oil for browning and sautéing
  • 1 lb dried pasta penne or your choice
  • 1 lb ground Italian sausage spicy or mild
  • 4 tablespoon butter divided
  • 1 large sweet onion diced fine
  • 2 large shallots diced
  • 4 cloves garlic minced
  • 3 roasted red peppers chopped and prepared ahead
  • 1 cup vegetable broth
  • salt and white pepper to taste
  • ½ cup heavy cream
  • ½ cup Parmesan or mozzarella grated
  • 1 bunch each parsley and basil fresh or dried

  • Preheat oven to 450°F. Roast red peppers 20–25 minutes until charred.
  • Steam peppers in covered bowl for 10 minutes then peel.
  • Cook pasta in salted water until al dente and set aside.
  • Brown sausage in skillet and set aside.
  • Sauté onion and shallots with 2 tablespoon butter about 4–5 minutes.
  • Add garlic, cooked chopped peppers, and broth. Simmer 5 minutes.
  • Blend sauce until smooth. Return to skillet, add butter, salt, and pepper.
  • Add browned sausage and cooked pasta. Stir to coat.
  • Top with cheese and sprinkle fresh herbs. Serve warm.

Notes

Store leftovers in fridge up to 3 days. Reheat with splash of broth or cream. Can freeze up to 1 month.
