large sweet onion
diced fine

large shallots

roasted red peppers
chopped and prepared ahead

vegetable broth
salt and white pepper
to taste

heavy cream

Parmesan or mozzarella

1 bunch each
parsley and basil
fresh or dried

Instructions
Preheat oven to 450°F. Roast red peppers 20–25 minutes until charred.
Steam peppers in covered bowl for 10 minutes then peel.
Cook pasta in salted water until al dente and set aside.
Brown sausage in skillet and set aside.
Sauté onion and shallots with 2 tablespoon butter about 4–5 minutes.
Add garlic, cooked chopped peppers, and broth. Simmer 5 minutes.
Blend sauce until smooth. Return to skillet, add butter, salt, and pepper.
Add browned sausage and cooked pasta. Stir to coat.
Top with cheese and sprinkle fresh herbs. Serve warm.
Notes
Store leftovers in fridge up to 3 days. Reheat with splash of broth or cream. Can freeze up to 1 month.
