Preheat your oven to 375°F. This step gets that skillet ready for the oven finish after the pressure work.
Mix onion powder, garlic powder, smoked paprika, fresh thyme, rosemary, salt and pepper in a bowl. Rub it all over your chicken thighs. You wanna get every bit covered, no lazy spots.
Heat 2 tablespoons salted butter and a splash of olive oil in an oven-safe skillet over medium-high heat. Sear chicken skin side down until golden and crispy, about 5-7 minutes, then flip for 3-4 minutes more.
Remove chicken and set aside. Throw in the remaining butter and soften your onions and apples in the same skillet, about 5 minutes till tender and smelling good.
Put chicken back on top of that apple-onion bed and toss in those rosemary sprigs. Pour in apple cider, broth (or wine), and Dijon mustard. Make sure everything’s well mixed before closing the lid.
Lock your pressure cooker sealing ring, close lid, and set it to high pressure for 10 minutes. When it’s done, let it do a slow release so juice doesn’t splash. Open up and if you wanna, finish it in the oven for 20-25 minutes till skin crisps and juices run clear.
