  • 2 pounds Ground beef 80/20 fat ratio for juicy kebabs
  • 1 bunch Fresh parsley finely chopped
  • 1 Onion grated or minced
  • 1 teaspoon Garlic powder
  • 1 Serrano or jalapeño pepper chopped fine
  • Salt and freshly cracked black pepper to taste
  • 2 cups Basmati rice washed and soaked for 15 minutes
  • 2 cans Chickpeas rinsed and drained
  • Olive oil for drizzling and cooking
  • Tomatoes halved, for roasting
  • Onions quartered, for roasting
  • Lemon juice for green sauce
  • Sumac for seasoning
  • Yogurt for green sauce
  • Sour cream for green sauce

  • Preheat oven to 425°F and lightly grease a large sheet pan.
  • Mix ground beef with parsley, grated onion, garlic powder, chopped pepper, salt, and pepper in a bowl.
  • Shape mix into kebab logs, place on pan, drizzle with olive oil.
  • Add tomatoes and onions around kebabs, season and drizzle with oil.
  • Roast for 25–30 minutes, flipping kebabs halfway for even browning.
  • Cook soaked rice and chickpeas with broth, salt, and oil at high pressure for 8 minutes; quick release and fluff.
  • Blend green sauce ingredients and drizzle over plated dish.

Notes

Store leftovers in airtight containers. Green sauce lasts 4–5 days refrigerated. Freeze if needed for easy meals later on!
