Preheat your oven to 400°F (200°C).
In a large mixing bowl, toss the diced potatoes with olive oil, salt, and black pepper until evenly coated. Spread them out in a single layer on one-half of the sheet pan.
Lay the bacon strips on the other half of the sheet pan alongside the potatoes.
Place the sheet pan in the preheated oven and bake for 15 minutes, or until the bacon is starting to crisp and the potatoes are beginning to soften.
While the potatoes and bacon are baking, whisk the eggs in a bowl. Season with salt and pepper.
After 15 minutes, remove the sheet pan from the oven. Use a spatula to flip the potatoes for even cooking, then add the diced bell pepper and onion over the potatoes.
Pour the whisked eggs evenly over the potatoes and vegetables. Arrange the partially cooked bacon on top of the eggs.
Return the sheet pan to the oven and bake for an additional 15 minutes, or until the eggs are fully set and the bacon is crispy.
Once cooked, remove from the oven and allow to cool for a couple of minutes. Garnish with fresh herbs if desired.
Cut into portions and serve directly from the sheet pan or transfer to plates. Enjoy!
