2-4chipotle chilies in adobochopped (or 1 tablespoon chipotle chili powder)

Preheat the oven to 425°F and line a large sheet pan with parchment paper.
Arrange corn, poblano peppers, zucchini, onion, and garlic on the pan. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
Roast in the oven for 20–25 minutes, turning once halfway through until charred and tender.
Reduce oven to 375°F. Once veggies are cool enough to handle, chop and mix them with salsa verde, chipotle chiles, paprika, honey, cilantro, and basil in a large bowl.
Warm tortillas until pliable. Spoon veggie filling into each tortilla, roll tightly, and place seam side down on a baking dish.
Pour remaining salsa over enchiladas and sprinkle with cheddar and pepper jack cheeses.
Bake enchiladas at 375°F for 10–15 minutes until cheese is melted and bubbling.
Serve warm with avocado, sour cream or yogurt, cotija or feta, and lime wedges.
