This easy sheet pan maple dijon chicken and vegetables is a wholesome and flavorful meal, perfect for busy nights. Juicy chicken breasts and colorful vegetables are roasted to perfection with a sweet and tangy sauce made from maple syrup and Dijon mustard.
Preheat the oven to 400°F. Line a sheet pan with parchment paper or spray with olive oil.
Toss chicken, carrots, shallots, and broccoli in a large bowl. Add maple syrup, Dijon mustard, salt, paprika, garlic powder, thyme, and olive oil. Coat evenly.
