Sheet Pan Pork Chops with Sweet Potatoes and Apples
Sheet pan pork chops is a simple and healthy dish all made on one pan. The pork chops are seasoned with a bold dry rub and paired with tender roasted sweet potatoes and apples.
Preheat your oven to 400°F (200°C). Toss your diced sweet potatoes in a big bowl with 1 tablespoon olive oil, salt, and half your rosemary. Spread them out in an even layer on your sheet pan.
Season the pork chops by rubbing them with the remaining tablespoon of olive oil, coconut sugar, paprika, chili powder, thyme, and the rest of the rosemary. Ensure they are thoroughly coated.
Nestle the pork chops among the sweet potatoes on the sheet pan, spacing them for air circulation. Add diced apple around the chops evenly.
Roast in the oven for about 30 minutes. Aiming for the pork chops to reach an internal temp of 145°F (63°C) while sweet potatoes become tender and caramelized.
Remove from the oven and let everything rest for 5 minutes before serving.

Serve immediately. Store leftovers in an airtight container in the fridge for 3 to 4 days or freeze for up to 2 months.
