Ingredients
  

  • 1.5 pounds sausage (Italian or your choice, cut into 1-inch pieces)
  • 2 pounds baby potatoes (halved)
  • 1 each red bell pepper (sliced)
  • 1 each green bell pepper (sliced)
  • 1 medium onion (sliced)
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper
  • for garnish, optional fresh parsley

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the halved baby potatoes, sliced bell peppers, sliced onion, and sausage pieces.
  • Drizzle the olive oil over the mixture. Add garlic powder, paprika, oregano, salt, and pepper. Toss everything together until the potatoes and sausage are well coated.
  • Spread the mixture evenly on a large sheet pan in a single layer. Make sure there is space between the pieces for even cooking.
  • Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, and the sausage is cooked through. Stir halfway through to ensure even cooking.
  • Once cooked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.

Notes

Feel free to customize the vegetables based on your preference or what you have on hand. Zucchini, carrots, or asparagus also work well.
Serve this dish with a side salad or some crusty bread to make a complete meal.
