Ingredients
  

  • 12 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • Fresh parsley, chopped for garnish

Instructions
 

  • Begin by cooking the fettuccine according to package instructions in a large pot of salted boiling water. Drain the pasta in a colander and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  • Add the shrimp to the skillet, seasoning them with salt, black pepper, and red pepper flakes (if using). Cook the shrimp for 2-3 minutes on each side, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
  • In the same skillet, pour in the heavy cream and bring it to a gentle simmer over medium heat. Whisk in the grated Parmesan cheese until melted and smooth. Adjust seasoning with more salt and pepper as needed.
  • Add the cooked fettuccine and shrimp back into the skillet, tossing everything together until well-combined and the pasta is coated with the sauce.
  • Remove from heat and garnish with chopped fresh parsley. Serve immediately on individual plates.

Notes

For a healthier version, you can use whole wheat fettuccine and reduce the amount of heavy cream by substituting it with half-and-half or milk.
Feel free to add vegetables such as spinach or broccoli for added nutrition and flavor.
This dish is best served fresh but can be stored in the refrigerator for up to 2 days. Reheat gently on the stove with a splash of cream or water to loosen the sauce.
