- 1.5 lbs shrimp (16-20 count size), peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
- as needed lemon wedges (for serving)
In a mixing bowl, combine the olive oil, lemon juice, minced garlic, paprika, chili powder, salt, and black pepper. Mix well to create the marinade.
Add the shrimp to the bowl and toss to coat them evenly in the marinade. Cover and let marinate in the refrigerator for about 15 minutes.
Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for at least 10 minutes to prevent burning.
Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking.
Place the skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp are opaque and cooked through.
Remove the skewers from the grill and sprinkle with chopped parsley for garnish.
Serve immediately with lemon wedges on the side for squeezing over the shrimp.
Feel free to add your favorite vegetables to the skewers, such as bell peppers or zucchini, for added flavor and nutrition.
If you want a spicy kick, consider adding some red pepper flakes to the marinade.
For a smoky flavor, you can use a charcoal grill instead of a gas grill.
