Ingredients
  

  • 12 ounces linguine or spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes Adjust to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • ½ cup white wine Optional
  • 1 unit Juice of 1 lemon
  • to taste unit Salt and pepper
  • ¼ cup fresh parsley, chopped
  • for serving unit Grated Parmesan cheese Optional

Instructions
 

  • Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  • In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  • Add the shrimp to the skillet and cook for about 2-3 minutes, stirring occasionally, until they turn pink and opaque.
  • If using, pour in the white wine and let it simmer for 2 minutes to reduce slightly.
  • Add the cherry tomatoes and spinach to the skillet. Cook for another 2-3 minutes until the tomatoes soften and the spinach wilts.
  • Squeeze in the lemon juice and season with salt and pepper to taste. If the mixture seems dry, add a little reserved pasta water to achieve your desired consistency.
  • Add the drained pasta to the skillet. Toss everything together using tongs or a pasta fork until the pasta is well coated with the sauce.
  • Remove from heat and stir in the fresh parsley. Serve with grated Parmesan cheese, if desired.

Notes

Feel free to substitute the shrimp with chicken or your favorite vegetables.
For a creamier sauce, you can add ½ cup of heavy cream after the wine step.
