- 1 medium onion, chopped
- 2 cloves garlic, minced
- 15 ounces diced tomatoes, drained
- 1 cup pasta (elbow or shells)
- 1 cup shredded cheddar cheese
- 1 cup beef broth
- 1 teaspoon Italian seasoning
- salt and pepper to taste
- olive oil (for cooking)
Preheat the oven to 350°F (175°C).
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
Add the ground beef to the skillet. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Season with salt, pepper, and Italian seasoning.
While the beef is browning, cook the pasta according to package instructions until al dente. Drain and set aside.
Once the beef is browned, stir in the drained diced tomatoes and beef broth. Let it simmer for about 5 minutes.
In a large bowl, combine the cooked pasta with the beef mixture. Mix until well combined.
Transfer the mixture into the prepared casserole dish. Top with shredded cheddar cheese.
