- 2 cups fresh strawberries, hulled and sliced
- ¼ cup granulated sugar Adjust according to the sweetness of the strawberries.
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch Optional, for thickening.
- 1 tablespoon water For mixing with cornstarch if using.
In a medium saucepan, combine the sliced strawberries and granulated sugar. Stir gently to coat the strawberries in sugar. Allow them to sit for 5 minutes until they start to release their juices.
Place the saucepan over medium heat. Cook the strawberries, stirring occasionally, for about 5 minutes, or until they start to soften and break down.
If you’re using cornstarch, mix it with 1 tablespoon of water in a separate bowl to create a slurry. Add the slurry to the saucepan and stir well. Cook for an additional 2–3 minutes to thicken the sauce.
Add the lemon juice to the saucepan and mix it in. If you prefer a smoother sauce, you can blend it with an immersion blender or transfer it to a regular blender and puree until smooth.
Remove from heat and let the sauce cool slightly before serving. It can be stored in the refrigerator for up to one week.
