Instructions
Start by cooking the bacon in a skillet over medium heat. You wanna get it crispy but not burnt. When it9s done, take it out and save the bacon fat - stuff9s pure gold.
Add your diced onion, carrot, and celery into that same skillet with the bacon fat. Saut e9 them for about 5 minutes or until they start feeling soft and smelling good.
Next toss in the minced garlic and cook just another minute until you can really smell it. Don9t let it burn though, that9s a quick way to ruin a good soup.
Move all those vegetables and the bacon pieces right into your slow cooker.
Add the drained beans, chicken stock, tomato paste, bay leaves, and that tiny bit of liquid smoke if you decided to use it. Give it a good stir to mix everything up.
Pop the lid on, set your cooker on low for about 6 to 8 hours or high for 3 to 4 hours. You9ll wanna cook until veggies are tender and flavors all blended nice.
About 30 minutes before you wanna eat, stir the cooked bacon back in so it warms through but stays a little crisp.
Before serving, don9t forget to fish out those bay leaves. Then taste it and adjust salt and pepper till it sings.
