  • 1 pound Ground beef sirloin 93/7 is recommended
  • 1 cup Matchstick carrots for crunch
  • 1 Red bell pepper medium, sliced thin
  • 2-3 Large scallions roughly chopped
  • 3 cloves Garlic minced
  • 0.5 cup Low sodium soy sauce
  • 2 tablespoons Brown sugar
  • 14.25 ounces Chicken or beef stock
  • 2 packs Ramen noodles discard seasoning packets
  • Sesame seeds optional, for garnish
  • Scallions optional, for garnish

  • Brown the ground beef in a large skillet over medium heat until no longer pink. Drain excess fat if needed.
  • Add minced garlic to the skillet and cook for 1 minute until fragrant.
  • Transfer the beef and garlic mixture to your slow cooker.
  • Add matchstick carrots, sliced bell pepper, and chopped scallions to the slow cooker and stir.
  • In a medium bowl, whisk together soy sauce, brown sugar, chicken stock, and pour into slow cooker. Stir everything together.
  • Cover and cook on LOW for 4–6 hours (or HIGH 2–3 hours).
  • 30 minutes before serving, add ramen noodles and stir into broth. Let them cook until tender. Garnish and serve hot.

Notes

Feel free to add extra toppings like soft-boiled eggs, sriracha for heat, or fresh lime for zest. Store leftovers in airtight containers and reheat gently to avoid soggy noodles.
