This slow cooker chicken burrito bowl is an easy, one-pot meal layered with juicy chicken breasts, hearty brown rice, black beans, corn, and a zesty taco seasoning. Comforting, flavorful, and perfect for make-ahead meals.
Place chicken breasts at the bottom of your slow cooker.
Add uncooked brown rice over the chicken.
Add black beans and corn on top.
Add diced tomatoes with green chiles.
Pour in chicken broth.
Sprinkle taco seasoning and stir gently to combine. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
Shred chicken, return it to the cooker, season with salt and pepper, then top with cheddar cheese and cilantro before serving.
Notes
For easy cleanup, line your slow cooker with a liner. Refrigerate leftovers in airtight containers or freeze for later. Reheat with a splash of broth for best texture.
