Instructions
Place chicken broth, olive oil, lime juice, garlic, jalapeno, cumin, paprika, salt, and pepper into a blender and blend until smooth.
Lay chicken breasts in a single layer in the cooker pot.
Pour blended sauce over the chicken to coat evenly.
Seal the cooker lid and cook on high pressure for 10 minutes or slow cook on low for 6–7 hours.
Once cooked, do a quick release and confirm float valve drops safely.
Shred the chicken with two forks and toss with chopped cilantro. Serve hot.
Notes
You can use pre-minced garlic or jarred chopped jalapeno to save time. For frozen chicken, add 5 minutes to pressure cooking time.
