  • 0.5 cup Chicken broth
  • 0.25 cup Olive oil
  • 0.25 cup Lime juice
  • 4 cloves Garlic peeled and smashed
  • 1 Jalapeno seeded and chopped
  • 2 teaspoons Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Kosher salt
  • 1 teaspoon Ground black pepper
  • 2 lb Boneless skinless chicken breasts
  • 0.5 cup Chopped cilantro

  • Place chicken broth, olive oil, lime juice, garlic, jalapeno, cumin, paprika, salt, and pepper into a blender and blend until smooth.
  • Lay chicken breasts in a single layer in the cooker pot.
  • Pour blended sauce over the chicken to coat evenly.
  • Seal the cooker lid and cook on high pressure for 10 minutes or slow cook on low for 6–7 hours.
  • Once cooked, do a quick release and confirm float valve drops safely.
  • Shred the chicken with two forks and toss with chopped cilantro. Serve hot.

Notes

You can use pre-minced garlic or jarred chopped jalapeno to save time. For frozen chicken, add 5 minutes to pressure cooking time.
