Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 medium potatoes, peeled and diced
  • 2 cups carrots, sliced
  • 1 cup corn frozen or canned, drained
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 8 ounces cream cheese, softened
  • 1 cup shredded Cheddar cheese
  • 1 cup milk

Instructions
 

  • In a large skillet, brown the ground beef over medium heat. Drain excess fat and transfer the cooked beef to the slow cooker.
  • Add the diced onion, minced garlic, chicken broth, potatoes, carrots, corn, basil, paprika, salt, and pepper to the slow cooker. Stir to combine.
  • Cover and cook on low for about 6 hours or until the vegetables are tender.
  • At the end of the cooking time, add the softened cream cheese, shredded Cheddar cheese, and milk to the slow cooker. Stir until the cheeses are melted and well incorporated.
  • Taste and adjust seasoning if needed. Serve hot and enjoy!
