A comforting and easy-to-make lasagna done in the slow cooker, packed with cheesy layers, fresh herbs, and rich bolognese sauce for a perfect weeknight dinner.
30ozwhole milk ricotta cheesecreamy base for rich texture
1tablespoondried Italian seasoningclassic blend of herbs
1tablespoonminced fresh basilfor a fresh, bright pop
1teaspoonkosher salt
½teaspoonblack pepper
1pinchground nutmegoptional but recommended
1large egglightly beaten
16ozshredded whole milk Mozzarella

12ozdried oven-ready wavy lasagna noodlesno need to pre-boil

Mix ricotta cheese with dried Italian seasoning, fresh basil, salt, pepper, nutmeg, and beaten egg until smooth.
Spray the slow cooker insert with nonstick cooking spray.
Spread a thin layer of sauce on the bottom of the pot.
Layer oven-ready noodles to fit snug in the cooker.
Spread ricotta mix over noodles, then sprinkle mozzarella and Parmesan cheese.
Repeat layers of sauce, noodles, ricotta mix and cheeses until ingredients are used up, ending with sauce and cheese on top.
Cover and cook on LOW for 4 to 5 hours.
Turn off slow cooker and let lasagna rest uncovered for 15–20 minutes before serving.
Notes
Let your lasagna rest before slicing to help the layers set up nicely. You can refrigerate portions for 3-4 days or freeze individually for longer storage.
