Whisk the yogurt, garlic, lemon juice, lemon zest, and ¾ teaspoon of the salt in a medium bowl to make the sauce.
Place the chicken into a 6-quart slow cooker and season with the remaining salt.
Pour ⅓ cup of the yogurt sauce over the chicken and turn pieces to coat evenly.
Cover and cook on low for 4–6 hours or on high for 2–3 hours, until chicken is tender and cooked through.
Remove the chicken, shred or slice as preferred, discard excess liquid, then return chicken to cooker with ¼ cup cooking liquid and ⅓ cup reserved yogurt sauce. Warm through for 5 minutes.
