  • 1.25 lbs pork tenderloin filet Hatfield brand
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • ¼ teaspoon ground ginger
  • 20 oz canned pineapple chunks drained
  • 2 bell peppers chopped
  • 1 onion chopped
  • 3 cloves garlic minced

Sauce Ingredients

  • ¼ cup unsweetened applesauce
  • ¼ cup ketchup
  • ¼ cup brown sugar
  • ¼ cup reduced sodium soy sauce
  • ¼ cup barbecue sauce Stubbs Original
  • 1 tablespoon lime juice
  • 1.5 tablespoon cornstarch mixed with equal water
  • 1.5 tablespoon water

For Serving

Instructions

  • Trim any excess fat off the pork tenderloin.
  • Combine garlic powder, onion powder, paprika, salt, and ginger. Rub over pork.
  • Sear seasoned pork in a frying pan over medium-high heat for color and flavor.
  • Place seared pork in the slow cooker. Top with chopped peppers, onion, garlic, and pineapple chunks.
  • Mix applesauce, ketchup, brown sugar, soy sauce, barbecue sauce, and lime juice. Pour over pork and vegetables. Cover and cook.
  • Cook on low for 6-8 hours or high for 4-5 hours until pork is tender.
  • Remove pork, shred or chop it. Mix cornstarch and water, stir into the slow cooker. Return pork to cooker and cook 1 more hour on high.
  • Serve hot over rice or on buns with cheese, lettuce, pickles, and garnish with chives.

Notes

Leftovers store well and are versatile — use in tacos, bowls or sandwiches. Freeze for long term use.
