  • 3 lbs Russet potatoes peeled and diced small
  • 32 oz Chicken broth
  • ½ teaspoon Garlic powder add during cooking
  • ½ teaspoon Pepper add at the end
  • 8 oz Cream cheese add at the end
  • ½ lb Bacon sliced, cooked and drained
  • Chopped onions optional
  • Heavy cream to stir in at the end
  • Shredded cheese to stir in at the end

  • First, chop your bacon up and cook it crisp in a skillet. Lay it on paper towels and let it drain so it stays nice and dry.
  • Next, peel and dice your potatoes into small cubes. The smaller, the better for that quick cooker tender pull.
  • Toss potatoes, cooked bacon, chopped onions if you’re using, and minced garlic right into your slow cooker.
  • Pour in the chicken broth and sprinkle in your garlic powder and pepper. Stir it good so all the flavors get cozy.
  • Pop the lid on and set the cooker on low for 360 to 480 minutes or high for 180 to 240 minutes. Check for that tender pull on the potatoes.
  • Use your immersion blender to mash just some of the soup, leaving some chunks behind for texture that’s still creamy but not all mush.
  • Stir in the cream cheese, then add the heavy cream and shredded cheese. Cook for another 15-20 minutes to melt all those good bits in. Taste and adjust your salt and pepper. Garnish with green onions or extra bacon pieces if you want. Serve hot and enjoy the cozy vibes!

The soup will start to thicken if the lid is kept off too long. Add water or more broth if needed. You can cook the bacon ahead and keep it in the fridge for convenience. Peeling and dicing potatoes in batches is safer and faster. Use quick release on your pressure cooker to avoid overcooking.
