- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- 1 cup unsalted butter softened
- 1 cup brown sugar packed
- 1 cup unsulfured molasses
- 1 large egg
- 2 teaspoons vanilla extract
- ½ cup granulated sugar for rolling
Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper if desired.
In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves until well combined. Set aside.
In a large mixing bowl, use an electric mixer or a wooden spoon to cream the softened butter and brown sugar together until light and fluffy (about 2-3 minutes).
Add the molasses, egg, and vanilla extract to the butter mixture, mixing until fully incorporated.
