Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper (if using).
In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt until well combined. Set aside.
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy using an electric mixer or whisk.
Add the egg, molasses, and vanilla extract to the butter mixture, and mix until fully incorporated.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Using a cookie scoop or spoon, portion out dough balls about 1.5 inches in diameter. Roll the dough balls in extra granulated sugar for a sweet, sparkly finish.
Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly cracked but still soft in the center.
Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack to cool completely.
