Equipment

  • 1 mixing bowl
  • 1 set measuring cups and spoons
  • 1 grater
  • 1 frying pan or skillet
  • 1 slotted spoon
  • 1 paper towels for draining

Ingredients
  

  • 2 cups sweet corn Fresh or frozen, if using frozen corn, ensure it is thawed and drained well.
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper Adjust to taste.
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup green onions Finely chopped.
  • ¼ cup red bell pepper Finely chopped.
  • 2 large eggs
  • ½ cup milk
  • Vegetable oil for frying

Instructions
 

  • If using fresh corn, cut the kernels off the cob. If using frozen corn, ensure it is thawed and drained well.
  • In a mixing bowl, combine the corn, flour, baking powder, paprika, cayenne pepper, salt, black pepper, green onions, and red bell pepper. Mix well to combine.
  • In a separate bowl, whisk together the eggs and milk. Gradually add the wet mixture to the dry mixture, stirring until just combined. Avoid overmixing.
  • Heat about ¼ inch of vegetable oil in a frying pan over medium heat.
  • Once the oil is hot, drop spoonfuls of the batter into the pan, making sure not to overcrowd.
  • Fry the fritters for 3-4 minutes on each side or until golden brown and crispy.
  • Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain excess oil.
  • Repeat with the remaining batter, adding more oil to the pan if necessary.
  • Serve hot, and enjoy your spicy corn fritters with your choice of dipping sauce.

Notes

You can add chopped jalapeños for extra heat if desired.
These fritters can also be baked in the oven at 400°F (200°C) for a healthier option; simply place them on a greased baking sheet and bake for about 15-20 minutes, flipping halfway through.
Store leftover fritters in an airtight container in the refrigerator for up to 2 days and reheat in the oven to regain crispiness.
