  • 6 eggs
  • ¾ cup liquid egg whites pure
  • ½ cup cottage cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ cup sun-dried tomatoes drained and diced
  • 1.5 cups raw spinach chopped
  • ¼ cup feta cheese crumbled
  • 6 chicken sausage links thawed and cut into ½ inch pieces

  • Preheat oven to 350°F. Grease a 12-cup muffin tin or line with silicone liners.
  • Add eggs, egg whites, cottage cheese, garlic powder, and salt to a blender and blend until smooth.
  • Pour the blended mix into a large bowl and stir in sun-dried tomatoes, spinach, feta, and sausage.
  • Fill each muffin cup about ¾ full with the mixture.
  • Bake for 25 to 30 minutes until puffed and golden on top.
  • Remove from oven and let cool before removing from tin.
  • Serve warm or refrigerate for later use.

Notes

To reheat, microwave for 30-60 seconds or place in a 350°F oven for 5-8 minutes. Wrap individually to freeze and reheat later. For vegetarian option, omit sausage. For dairy-free, skip cottage cheese and feta or replace with alternatives.
