Season the chicken breasts with salt, pepper, onion powder, and garlic powder on both sides.
Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the chicken broth and scrape any bits off the bottom of the skillet. Bring it to a simmer.
Reduce heat to low and add the heavy cream and Italian seasoning. Stir well to combine.
Add the fresh spinach to the sauce and let it wilt down.
Stir in the grated Parmesan cheese until melted and the sauce is creamy. Adjust seasoning with salt and pepper if needed.
Return the cooked chicken breasts to the skillet and coat them with the creamy spinach sauce. Cook for an additional 2-3 minutes to heat through.
Serve hot on plates, drizzling extra sauce over the chicken.
