Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs total.
  • 2 cups fresh spinach
  • 1 cup heavy cream For a lighter version, substitute with half-and-half or a plant-based cream alternative.
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • 1 cup grated Parmesan cheese

Instructions
 

  • Season the chicken breasts with salt, pepper, onion powder, and garlic powder on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the chicken broth and scrape any bits off the bottom of the skillet. Bring it to a simmer.
  • Reduce heat to low and add the heavy cream and Italian seasoning. Stir well to combine.
  • Add the fresh spinach to the sauce and let it wilt down.
  • Stir in the grated Parmesan cheese until melted and the sauce is creamy. Adjust seasoning with salt and pepper if needed.
  • Return the cooked chicken breasts to the skillet and coat them with the creamy spinach sauce. Cook for an additional 2-3 minutes to heat through.
  • Serve hot on plates, drizzling extra sauce over the chicken.

Notes

For added flavor, marinate the chicken in a mix of olive oil, lemon juice, and herbs for at least 30 minutes before cooking.
You can serve this dish with rice, pasta, or a side salad for a complete meal.
