Ingredients
  

  • 8 pieces lasagna noodles
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded Divided into two halves for layering and topping.
  • ½ cup Parmesan cheese, grated
  • 1 piece egg
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • to taste salt
  • to taste pepper
  • 2 cups marinara sauce For layering and topping.

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cook the lasagna noodles according to package instructions until al dente. Drain and let cool slightly.
  • In a mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella, Parmesan cheese, egg, garlic powder, oregano, salt, and pepper. Mix until well combined.
  • Spread a layer of marinara sauce on the bottom of a baking dish.
  • Take a lasagna noodle and spread a generous amount of the spinach and cheese mixture along the length of the noodle. Roll the noodle up tightly and place it seam-side down in the baking dish.
  • Repeat this process for all the lasagna noodles.
  • Once all roll-ups are in the baking dish, top with the remaining marinara sauce and sprinkle the rest of the mozzarella cheese over the top.
  • Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  • Remove from the oven and let it sit for a few minutes before serving.

Notes

You can add cooked ground meat or sausage to the spinach filling for additional protein.
Feel free to add other vegetables, such as mushrooms or bell peppers, to the filling for extra flavor.
Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
