- 1 cup unsalted butter Softened to room temperature for easy mixing.
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract Optional.
- 2 ¼ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- colored sugar or sprinkles For topping, optional.
Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or leave them ungreased.
In a mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until the mixture is light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and almond extract (if using) and combine thoroughly.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, mixing until just combined.
Fit your cookie press with the desired disk shape and fill it with the cookie dough.
Press cookies onto the prepared baking sheets, leaving about an inch of space between each cookie. If desired, sprinkle colored sugar or sprinkles on top.
Bake in the preheated oven for 8 to 10 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Make sure the butter is softened to room temperature for easy mixing.
You can store these cookies in an airtight container for up to a week.
For variations, consider adding cocoa powder for chocolate spritz cookies or different extracts for unique flavors.
