  • 2 cups long grain white rice rinsed
  • 6 oz sliced white mushrooms fresh
  • 10.5 oz French onion soup 1 can
  • 21 oz beef consomme 2 cans
  • 1 stick salted butter melted
  • 1 cup grated Pecorino Romano
  • 1.5–2 lbs boneless skinless chicken thighs 5 thighs used
  • 0.5 tablespoon paprika for seasoning chicken
  • 1 teaspoon complete seasoning for seasoning chicken

  • Preheat oven to 350°F.
  • Spray a 9x13 inch baking dish with nonstick spray.
  • Spread rinsed uncooked rice evenly in the dish.
  • Evenly layer sliced mushrooms on top of the rice.
  • Mix French onion soup, beef consomme, and melted butter together and pour over rice and mushrooms.
  • Season chicken thighs with paprika and complete seasoning, then place on top of rice mixture.
  • Sprinkle grated Pecorino Romano over the top.
  • Cover tightly with foil and bake for 90 minutes.
  • Uncover and bake an additional 15–20 minutes until chicken is cooked and rice is tender.
  • Let rest 5 minutes before serving.

Notes

For extra flavor, brown the chicken thighs before assembling. Leftovers freeze well and reheat beautifully with a splash of broth.
