  • 1 lb Ground beef main protein
  • 1 cup Yellow onion diced
  • 2 cloves Garlic minced
  • 1 Red bell pepper chopped
  • 1 Green bell pepper chopped
  • 1 tablespoon Tomato paste
  • 1 cup White long grain rice
  • 2 cups Beef broth
  • 1 can Fire roasted tomatoes 14.5 oz
  • ½ cup Shredded Mexican cheese

  • Brown the ground beef in your pressure cooker on the sauté setting or in a large skillet until it gets a nice crust for flavor.
  • Add diced onions, minced garlic, and chopped bell peppers. Sauté for 5–7 minutes until soft.
  • Stir in tomato paste and cook for 1–2 more minutes for deeper flavor.
  • Add rice, beef broth, and fire roasted tomatoes. Stir well to combine.
  • Close the lid, cook on high pressure for 7 minutes.
  • Let pressure release naturally for 10 minutes, then manually release any remaining pressure.
  • Sprinkle Mexican cheese on top, cover for a few minutes until melted. Serve hot.

Notes

Swap beef with turkey for a lighter version or add red pepper flakes for a spicy twist. Freezes well, too!
