Instructions
Brown the ground beef in your pressure cooker on the sauté setting or in a large skillet until it gets a nice crust for flavor.
Add diced onions, minced garlic, and chopped bell peppers. Sauté for 5–7 minutes until soft.
Stir in tomato paste and cook for 1–2 more minutes for deeper flavor.
Add rice, beef broth, and fire roasted tomatoes. Stir well to combine.
Close the lid, cook on high pressure for 7 minutes.
Let pressure release naturally for 10 minutes, then manually release any remaining pressure.
Sprinkle Mexican cheese on top, cover for a few minutes until melted. Serve hot.
Notes
Swap beef with turkey for a lighter version or add red pepper flakes for a spicy twist. Freezes well, too!
