Ingredients
  

  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup bell peppers mixed colors, chopped
  • 1 cup pineapple chunks canned or fresh
  • ½ cup onion chopped
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs
  • ¼ cup vegetable oil for frying
  • ¼ cup sugar
  • ¼ cup vinegar white or apple cider
  • ¼ cup ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder

Instructions
 

  • In a large bowl, combine the chicken pieces with salt, pepper, garlic powder, and ginger powder. Mix well to coat the chicken.
  • Prepare a breading station by placing the flour in one bowl, the beaten eggs in another bowl, and the breadcrumbs in a third bowl.
  • Dredge each piece of chicken first in the flour, then dip it in the egg, and finally coat it with the breadcrumbs. Set aside.
  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes per batch. Remove from the skillet and drain on paper towels.
  • In the same skillet, add the chopped onion and bell peppers. Sauté until softened, about 3-4 minutes.
  • In a small bowl, whisk together sugar, vinegar, ketchup, and soy sauce. Pour the sauce over the vegetables in the skillet. Add the pineapple chunks and stir to combine.
  • Bring the sauce to a simmer and let it cook for 2-3 minutes until slightly thickened.
  • Add the fried chicken to the skillet and toss everything together until the chicken is well-coated in the sauce. Cook for an additional 2 minutes.
  • Remove from heat and serve hot over rice or noodles on a serving platter.

Notes

For a healthier twist, you can bake the breaded chicken instead of frying it. Just brush them with a little oil and bake at 400°F (200°C) for 20-25 minutes until golden and crispy.
You can customize this recipe by adding other vegetables like broccoli or carrots, according to your preference.
Serve with steamed rice or fried rice for a complete meal.
