Brown the ground pork in a large skillet over medium heat, breaking it apart as it cooks.
Drain excess fat, add ginger, garlic, and red pepper, and sauté until veggies soften.
Add water chestnuts, honey, coconut aminos, vinegar, nut butter, and sriracha; mix well.
Cook for 5-7 minutes for flavors to meld and sauce to thicken, watching broth depth.
Transfer to a pressure cooker, seal tightly, and cook on high pressure for 8 minutes.
Quick release steam, open lid, and serve pork in lettuce leaves; top with onions, cilantro, and peanuts.
