Sweet Potato and Apple Casserole

  • 4 medium Sweet potatoes peeled and cut into 1-inch dice
  • 4 small Apples peeled, cored, and diced into 1-inch pieces
  • 0.5 cup Unsalted butter melted
  • 0.5 cup Dark brown sugar
  • 0.25 cup Maple syrup
  • 2 teaspoons Pumpkin pie spice
  • 0.25 cup Pecans chopped
  • to taste Salt

Instructions

  • Add the potatoes to a large pot and cover with water. Bring to a boil over high heat and cook until the potatoes are just starting to soften. You don’t want them to cook until soft because they will continue to cook during the baking process.
  • Preheat oven to 350°F and spray a 9x13" casserole dish with non-stick spray.
  • Drain the potatoes and place them into the prepared baking dish.
  • Add the apples to the casserole dish.
  • In a small bowl mix together the melted butter, brown sugar, maple syrup, and pumpkin pie spice.
  • Pour mixture over the apples and potatoes and stir to combine.
  • Add to the oven and bake for 25 minutes.
  • Remove from the oven and top with pecans.
  • Add back to the oven and cook for 5 minutes more to toast the pecans.

Notes

Root Vegetables: Sweet potatoes can be replace by or combined with other root vegetables such as turnips or parsnips.
To Make Ahead: Prepare casserole as directed and cover tightly before baking. Refrigerate up to 48 hours. Remove from the fridge at least 30 minutes before baking. Bake as directed.
